Beat the Chill With Kyocera’s Game Day Chili

GAME DAY CHILI

INGREDIENTS:

1 1/4 pounds ground beef

1 3/4 cups celery, diced

1/2 cup green pepper, diced

1 1/2 cups onion, diced

1 1/3 cups water

1 1/2 cups canned pink beans, undrained

3 cups tomato juice

2 cups tomato sauce

2 1/2 cups canned diced tomatoes, undrained

3 cups canned pink beans, puréed with liquid

1 cup canned kidney beans, undrained

2 1/2 tbsp Worcestershire sauce

3/4 tsp Tabasco sauce

2 1/2 tsp chili powder

1/2 tsp oregano, ground to a fine powder

1 tsp garlic powder

3/4 tsp salt

1 tsp paprika

1 1/2 tsp onion powder

3/4 tsp ground cumin

2 tsp crushed oregano

Salt and pepper to taste

DIRECTIONS:

In a large saucepan or Dutch oven, cook the ground beef until two-thirds done.  Add the celery, green pepper, and onion, and sauté until the meat is cooked through.  Carefully drain off the grease.

In a bowl, mix the water and the 1 1/2 cups of undrained pink beans, and add them to the saucepan with the meat.  Add the remaining ingredients to the saucepan and stir.  Bring the mixture to a boil and then simmer for 30 minutes.

Chili can be served with cheese, sour cream, or green onions.  It’s great as an accompaniment to nachos, baked potatoes, or french fries.  Enjoy!
